- Crushed fresh into salsas and chirmol, or over soups, beans and eggs. Commonly pickled in vinegar with onion to serve as a table condiment. Very hot, so a few go a long way.

- Look for bright, firm, glossy chiles with no shriveling or mold. Keep refrigerated in their box or a dry container; they can also be dried or frozen for longer storage.

- Pickup or delivery six days a week across Southern California; shipping to other states by truck, and air freight on request.
