- The husk is removed and the flower is usually boiled first to soften the bitterness. The classic dish is pacaya envuelta en huevo: battered in egg, fried and served in tomato sauce; it is also eaten in salads or with eggs.

- Choose firm pacayas with the husk intact and no soft or dark spots. Keep refrigerated in the husk and use within a few days.
